Asian Fried Quinoa

Asian Fried Quinoa

I know that I say it all the time but this recipe is seriously, SO good!
I have been playing around with Quinoa a bit {an alternative to rice} because a number of friends 
told me how great it is.
So I decided to give Fried Rice a Quinoa twist.
And man, did it ever turn out awesome!

Asian Fried Quinoa

You will need:


1 cup cooked Quinoa
1 small onion, diced
3/4 cup frozen peas
2 eggs
2 Tbsp oyster sauce

In a frying pan, cook onion until opaque.  Add peas and stir until softened.  Push mixture to the side of the pan and scramble fry eggs in the pan.  Finally add Quinoa and stir mixture all together, cooking until well combined and warm throughout.  Toss with oyster sauce and serve.

Serves 4.  130 calories per serving.

    After my own heart… another yummy quinoa concoction is with tuna, a little shredded cheese and tomatoes and avocado. I usually add some italian seasonings too.. delish.
    Def trying this version.. sounds amazing
