Bacon wrapped grilled shrimp:
Ingredients:
- 1 pound jumbo shrimp, about 16-20 shrimp
- 6 bacon slices
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1/4 cup brown sugar
Directions:
1. Place bacon strips on a prepared baking sheet and cook at 350 degrees for 5-10 mins.
Tip: pre-cooking the bacon slightly is key to making the bacon crisp when grilling.
2. Allow the bacon to cool before cutting it into thirds.
3. Pat the shrimp dry with paper towel.
4. Preheat the grill to medium-high heat, about 375 degrees F.
5. In a small bowl, mix together the cayanne pepper, garlic powder and brown sugar.
6. Coat the raw shrimp with the mixture.
7. Wrap each piece of shrimp with a piece of bacon. Sprinkle with remaining rub.
8. Grill the shrimp for 3-4 minutes per side for a total of 7-8 minutes.
9. Flip each strip half way through grilling to help each slice of bacon cook thoroughly.
10. Serve with homemade bbq sauce or sweet chili dipping sauce.
