1 pound hot Italian turkey sausage
1 large onion, diced
3 cloves garlic, minced
1 (28-ounce) can diced tomatoes
6 ounces pesto
15 ounces ricotta cheese
1 (9-ounce) package spinach
2 cups grated mozzarella cheese
Preheat oven to 375 degrees.
Layer in a large baking dish penne, sausage mixture, mozza cheese, ricotta, parmesan and spinach. Reserve some cheese to sprinkle over the top. I often have enough ingredients to layer another 8 x 8 baking dish that I bake and put in the freezer for later.
