Blackberry Lemon Bar Recipe

The recipe I am sharing with you today is an easy bar recipe that offers a twist on the typical lemon bars. These blackberry lemon bars are a wonderful combination of sweet and tart. They are so delicious!
They are perfect for sharing at a party, enjoying with coffee, or as a simple ending to a backyard meal. This is such a great recipe for blackberry season too.
Blackberry Lemon Crumb Bars
Crust Ingredients:
- ¾ cups butter
- ½ cup brown sugar
- 1 tsp lemon zest
- 2 cups flour
- ¼ tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon
Filling Ingredients:
- ½ cup sugar
- 2 tbsp all purpose flour
- 3 cups blackberries, halved
- 1 tsp lemon zest
- Juice of half of one lemon (about 2 Tbsp)
Directions:
- Heat oven to 350 F. Line an 8-inch square baking pan with parchment paper.
2. In a large mixing bowl, whisk together butter, brown sugar, and fresh lemon zest thoroughly.
3. Add flour, baking soda, salt, and cinnamon and mix until the dry ingredients are well incorporated into the butter and sugar.
4. Take one cup of the crumble mixture and set aside for later.
5. Press the rest of the dough into the bottom of the prepared pan and bake for 12-15 minutes. Let the crust cool completely on a cooling rack.
6. In a medium mixing bowl, combine sugar, flour, blackberries, lemon zest, and lemon juice, mixing well.
7. Pour blackberry mixture on the cooled crust, and spread evenly across the top of the crust.
8. Sprinkle the remaining crumble topping over the blackberry filling.
9. Bake the blackberry crumb bars for 30-35 minutes or until golden brown.

Bar Variations:
- If fresh blackberries aren’t an option for you, try using blackberry jam instead. You could also use frozen berries.
- Substitute raspberries for the blackberries.
- Add a layer of lemon curd or other fruit curd to the bars.
- Try blackberry lemon cheesecake bars. Spread the cheesecake layer over the crust, then add the blackberry filling.
- Make blackberry lime bars by replacing the lemon juice and zest with lime juice and zest.
- Cook up the blackberry filling ingredients to make a yummy blackberry sauce for ice cream or pancakes.
Tips and Tricks:
- You can mix the shortbread crust by hand with a pastry blender, using a food processor, or with an electric hand mixer.
- If you are feeling extra fancy, you can add a dusting of powdered sugar to the top of the cooled bars. Just make sure they are completed cooled first, otherwise the sugar will just melt.
- Any leftover bars can be stored at room temperature, in an airtight container, for up to 5 days.
