I love trying out a new recipe. Cheesy pasta is always a hit around here. Who doesn’t love a pasta dish covered in a creamy, cheesy sauce? Actually, my family loves any kind of pasta. If I can also get an easy meal on the dinner table quickly on a busy weeknight, I know I’ve found a winner!
This easy buffalo chicken pasta recipe gives you all the spicy flavour of your favourite buffalo chicken wings without the mess. Toss in your favourite pasta and you’ve got a fast, delicious meal, perfect for any time of year.
Buffalo Chicken Pasta:
Ingredients:
- 3 cups pasta, uncooked
- 1 1/2 Tbsp olive oil
- 3 cups chicken, cubed
- Salt and pepper, to taste
- 1 Tbsp ranch seasoning
- 4-8 oz cream cheese, softened (as desired)
- 1 cup sour cream
- 1/2 cup milk, as desired (optional)
- 1-2 cups chicken broth, as needed
- 1/4 cup buffalo-style hot sauce
- 1/2 cup blue cheese, divided
- 1 cup cheddar cheese, shredded
- 1 green onion, sliced thin
Directions:
1. Prepare the pasta according to package directions. Drain but do not rinse.
2. Meanwhile, heat the olive oil in a large skillet over medium heat.
3. Season the chopped chicken with salt, pepper and ranch seasoning.
4. Once the oil is hot, add the chicken and cook until the chicken reaches an internal temperature of 165F and is opaque (approximately 6-8 minutes).
5. Remove the chicken to a clean plate as you prepare the cream sauce.
6. Place the chicken broth in the skillet and bring to a simmer, then add the sour cream and cream cheese and stir as the cream cheese melts.
7. Add the Buffalo sauce and milk and cook until the sauce is smooth.
8. Add the chicken and pasta to the skillet and stir to coat completely in the sauce.
9. Add half of the blue cheese and cheddar cheese and stir to combine.
10. Sprinkle the remaining cheese and green onions over top and allow to melt before removing from heat.
Makes 6 servings.
Tips and tricks:
- Any pasta noodles can be used for this dish. A few of my favourites are penne pasta, bowtie, and rotini. Be sure to cook until just al dente. You want the cooked pasta to hold its shape when everything is being mixed together.
- Use a rotisserie chicken or leftover chicken to save even more time on this easy weeknight dinner.
- There are plenty of spicy buffalo sauces out there to try. Frank’s hot sauce is a great option.
- I find that it’s a good idea to check the spice level as I go. I can always add more heat, but making the dish less spicy is a little trickier!
- Serve with a side dish of cut up veggies or side salad, with blue cheese or ranch dressing, for a quick and complete meal.
Alternative cooking methods:
- Throw a few boneless, skinless chicken breasts into your slow cooker in the morning for extra juicy chicken, just in time for supper.
- You can also cook this easy recipe up in your Instant Pot or slow cooker.
- Make a buffalo chicken pasta casserole. After mixing the chicken, pasta, and sauce together, put it into a casserole dish, top with the remaining cheese, and bake until the cheese is bubbly.
- Leave out the pasta, and you’ve got my favourite buffalo chicken dip. Serve it with veggies, crackers, or tortilla chips, as a delicious appy or snack.
- Cook up some homemade chicken tenders with the seasoning blend. Serve with your favourite dip or that tasty buffalo chicken dip. You can also use them to make buffalo chicken wraps.
Optional ingredients:
- If blue cheese crumbles aren’t a family favourite, switch it out for mozzarella cheese instead. You could even substitute cottage cheese.
- Light cream cheese works just as well as regular.
- Garlic powder, onion powder, or a dash of worcestershire sauce can all be added for extra flavour.
How to store leftovers:
Store any leftovers in the refrigerator for up to one week. You can use an airtight container or a bowl covered tightly with plastic wrap.
