Canning Gooseberry Jelly

The little miss and I {We have a new addition, did you hear?  For more on that click here.} picked a bunch of wild gooseberries while camping a couple of weeks ago.  We had just barely enough to make this lovely Gooseberry Jelly…

We started with four cups of berries and crushed them with a potato masher.
 
Then we boiled the crushed berries.

After simmering for about 1/2 an hour we strained all of the berries through three layers of cheese cloth and a colander.

Then we boiled the extracted juice with sugar and pectin {following the directions on the pkg. of pectin}.

We poured the jelly into small 125 ml jars so that we had enough to share with everyone.

Our finished product.
