I love how easy these mint chocolate chip cookies are to make! They seriously only require simple ingredients that you probably already have in your kitchen or can easily find at the grocery store.
They were inspired by my love for chocolate chip mint ice cream, my favorite flavour of icecream in the summer. These cookies totally taste like mint chocolate chip ice cream only without the melty part!

The star ingredient of this chocolate cookie recipe is the peppermint extract that I swapped for vanilla extract! It makes for perfect chocolate mint flavor cookies every time.
Chocolate Chip Mint Cookie Recipe:
Ingredients:
- 1 cup flour
- ½ tsp baking soda
- ¼ cup cocoa powder
- ⅓ cup unsalted butter
- ½ cup white sugar
- 1 egg
- ½ tsp peppermint extract
- ½ cup chocolate chips
- 1 cup white frosting
- ⅛ tsp peppermint extract
- Green food coloring
- 1 Tbsp mini chocolate chips
1. Preheat the oven to 350 degrees fahrenheit. Line a baking sheet with parchment paper and set to the side.
2. In a large bowl, cream together butter and sugar.
3. Using a stand or electric mixer, beat the butter and sugar on medium speed until light brown. Once combined, add the egg and extract and beat on high for 3-4 minutes.
4. Slowly add the dry ingredients to the wet ingredients and turn the mixer on low speed to start, then after 1 minute turn the mixer up to high and mix until combined.
5. Add chocolate chips and stir with a rubber spatula until mixed throughly.
6. Use a cookie scoop to make even cookie dough balls and place them on the prepared baking sheets.
7. Bake for 10-12 minutes at 350 degrees f, or until the top of the cookie is set.
8. Allow to cool on the baking sheet for five minutes then transfer the baked cookies to a wire cooling rack to cool completely.
9. In a small bowl combine frosting, a few drops of green food coloring and mint extract. Mix to combine.
Tip: only a little bit of peppermint extract is needed in the frosting otherwise it can become overpowering.
10. Scoop the frosting into a piping bag with 1A tip and cover each cookie with the frosting.
11. Add mini chocolate chips to the top of the cookies.
This recipe makes 8-10 chewy mint chocolate chip cookies that can be stored in an airtight container for up to a week at room temperature. But these easy chocolate mint cookies probably won’t last that long!
