You are going to love these Coconut Ginger Date Bars! I have been making all kinds of homemade Lara bars recently and actually prefer them over store bought bars. Our boys love them too! I had wanted to create a bar that our kids could take to school and it needed to be nut-free. So I came up with this recipe and it has been a winner with everyone!
Coconut Ginger Date Bars
Ingredients
- 10 dates
- 1 cup unsweetened shredded coconut
- 2 Tbsp coconut oil
- 1 tsp vanilla extract
- 1 tsp fresh ginger
- 1/4 tsp cinnamon
- 2 Tbsp honey
- pinch of cloves
Instructions
- In a food processors combine all ingredients until a dough is formed.
- Place dough onto parchment paper and form into a log.
- Press into a flat log about 1/2" thick and cut into bars.
- Keep refrigerated.
I usually cut these into smaller squares for the kids lunches. They are also the perfect thing to pair with a late night chai tea latte… just sayin’. It only takes a few minutes to whip these up. Let me know if you try them!
