Ingredients:
- 1 cup flour
- ½ tsp baking soda
- ⅓ cup butter
- ½ cup brown sugar
- ¼ cup white sugar
- 1 egg
- 1 tsp vanilla
- ½ cup chocolate chips
- 1 cup Duncan Hynes vanilla frosting
- Blue food coloring
- Chips Ahoy Mini Chocolate Chip Cookies, 1 oz bag
- Oreo Mini Cookies, 1 oz bag
Tip: pre-made chocolate chip cookie dough mix can be used as a base for these cookies as well. Short cuts like this are great when I’m in a hurry to make a quick treat.
Directions:
1. Preheat the oven to 350 degrees f. Line a cookie sheet with parchment paper.
2. In stand mixer or a large bowl with a hand mixer, cream together butter and sugar.
3. Add egg and vanilla, mix well on low speed.
4. Add dry ingredients, combine until a soft dough forms.
5. Fold in chocolate chips with a rubber spatula.
6. Drop 8 to 10 large scoops of dough onto the baking tray. Leave at least 2″ between the cookie dough balls.
Tip: I like to use a large cookie scoop for this.
7. Bake at 350 for 12 minutes or until the edges start to brown. Place on a cooling rack to allow the cookies to cool quickly.
8. In a small bowl, add blue food coloring to the frosting and mix well.
9. Scoop the frosting into a piping bag with 1A tip and cover each cookie with the icing.
Tip: a plastic bag with the tip cut off works too!
10. Roughly chop up the mini oreos and mini chocolate chip cookies.
11. Place the chopped up cookie pieces onto the blue frosting.
For chewier, softer cookies simply adjust the baking time and take the cookies out of the oven one minute sooner. Just be sure to allow the cookies to cool completely before decorating.
How to store these delicious cookies:
Store these sweet treats in a large freezer bag or airtight container at room temperature for a week or in the freezer for up to three months.
