The winter months make me crave comfort foods. Casseroles, soups and hearty stews are often a big part of my meal planning this time of the year. Cream of mushroom soup is one of my all time favorites and recently I have been on a quest to make a low carb version with added protein. Well, today I am sharing the winning recipe with you! This dish is not only delicious but also perfect for those of us following a low carb, ketogenic lifestyle. Packed with lean protein and low carb, this soup fits perfectly within my daily macros.
With a bit of preparation this soup can easily become a new addition to your menu planning. Whenever I buy ground turkey from Costco I immediately make a batch of turkey meatballs. They are so easy to make and provide such a great source of lean protein! I love knowing exactly what ingredients are going into my meals. My Low Carb Turkey Meatball recipe is easy to follow and make. I often allow the meatballs to cool before storing them in the freezer for later use. Then when I want to make this soup I already have the meatballs ready to use.
1 pound ground turkey (made into these low carb turkey meatballs)
150 g mushrooms, diced
1 1/2 cups cream
3 cups chicken broth
50 g kale, chopped
1/2 tsp salt
1/2 tsp pepper
Make small meatballs using this low carb turkey meatball recipe.
In a medium stock pot saute mushrooms in 1/2 cup chicken broth until tender.
Add remaining ingredients to pot and simmer for 15 minutes.
