Festive food is one of my favorite ways to celebrate and enjoy the holidays! What could be easier than an egg shaped pizza for Easter this year?!

Many cultures have traditional Easter dishes. Some are specific to Good Friday, Easter Sunday, or to celebrate the end of Lent.

Other holiday traditions are specific to families. Some have Easter brunch together every year. Or maybe Easter morning involves an egg hunt, attending a church service, or enjoying a special breakfast.

I recently learned about an interesting dish that many Italians enjoy during the Easter holiday, called pizza rustica, pizza chiena, pizza ripiena, pizza gaina, or Italian Easter ham pie.

Called by many different names, including different spellings, this Italian Easter pizza is stuffed with cured meats, traditional Italian cheeses, and eggs.

There is even something called basket cheese involved! Italian households throughout the country have different variations of this pie, depending on the region, or even the town, they are from.

It is part quiche and part meat pie and nothing like what we in North America consider a pizza to be.

In our home, we like to celebrate with holiday-themed food, like this Easter pizza! Unlike the Italian Easter pie, this is the kind of pizza we are used to seeing in Canada and the United States.

Pizza is also the perfect dish for customizing to your family’s particular tastes. Let’s get started!

Easter pizza recipe:

Ingredients:

  • 1 can Pillsbury pizza crust
  • 2 cups mozzarella cheese, shredded
  • 1 cup sliced pepperoni
  • Yellow bell pepper
  • Orange bell pepper
  • 1/2 cup pizza sauce

Tip: A Homemade pizza pie crust recipe totally works for the bottom crust as well. I just like how the Pillsbury crust cuts out some of the prep work.

Directions:

​​1. Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.

2. Cut several slices of pepperoni into strips. Cut the bell peppers into thin slices.

3. Pop open the pizza crust dough. Divide the dough into two equal square shapes.

4. Shape the two pieces of dough into an oval shape and place them on a parchment paper lined cookie sheet.

5. Spread pizza sauce over the oval shaped pizza dough crust.

6. Add pepperoni slices to the pizza.

7. Top with mozzarella cheese and pat the cheese down slightly so that it is a uniform thickness.

8. Create an Easter egg pattern on the cheese using the pepperoni strips and pepper slices.

We created stripes but you could make dots or zig zags too. Let the kids have fun with it!

9. Bake at 350 for 20-25 minutes, until the cheese is melted and the crust is golden brown.

10. Cut into slices with a pizza cutter and sprinkle with dried oregano before serving.

You can totally have the kids add their toppings of choice.  My teenage boys love simple ingredients, so classic pepperoni pizza is a pretty safe bet.

Pizza topping ideas:

  • Italian sausage
  • Italian deli meats, like salami and ham
  • Bacon
  • Parmesan cheese
  • Olives, mushrooms, onions
  • Tomato
  • Pineapple
  • Other sauces, like alfredo or pesto

More tips & tricks:

  • Lining your pans with parchment paper or aluminum foil is a huge time-saver when it comes to cleaning up.
  • Make a stuffed pizza by adding cheese to your pizza crust. Wrap pieces of string cheese in excess dough around the edges of your pizza, sealing tightly to keep the cheese in.
  • A floured rolling pin may be used to help flatten and shape the dough.
  • Use small cookie cutters to create shapes for the toppings. It’s one of the best ways to make designs quickly and simply.
  • Whatever toppings or filling ingredients you use, keep it all in an even layer to make sure the pizza cooks evenly and thoroughly.
