When I switched to a ketogenic lifestyle and lost 85 pounds I totally thought that pasta would be lost to me. But it’s not! And today I am excited to share my super easy (I promise!) keto pasta recipe with y’all!

Two-Ingredient Keto Pasta

Traditional pasta has ingredients like; wheat flour, high fructose corn syrup, hydrolyzed soy protein, interesterified soybean oil and wheat gluten that are not keto!

The not so secret ingredient in this recipe is cheese, a staple when following a keto diet! Combining mozzarella cheese and egg yolk is the key to creating the fathead dough used in this recipe.

How to make keto pasta:

Ingredients:

  • 2 cups mozzarella, shredded
  • 2 egg yolks, room temperature

This easy recipe makes two servings of pasta with three net carbs each.

Directions:

1. Place the mozzarella cheese into a microwave safe bowl. Microwave on high in 30 second intervals, stirring between, until the cheese is completely melted. This usually takes about 2 minutes.

2. Add the cheese mixture to the stand mixer and allow it to cool for 1-2 minutes.

3. Add the egg yolks and mix until a soft dough forms. Scrape down the sides and remove cheese from the paddle with a rubber spatula if necessary.

4. Place the dough ball between two sheets of plastic wrap and use a rolling pin to flatten it into a rectangular shape about 1/8″ thick.

Tip: a piece of parchment paper works for this step too.

5. Refrigerate the dough for at least 30 minutes.

Tip: almond flour or coconut flour can be used to keep the dough from sticking to surfaces.

6. Use a pizza cutter to cut the pasta dough into thin strips and refrigerate overnight or a minimum of 8 hours to firm up.

How to use keto pasta noodles:

  • Place noodles gently into boiling water.
  • Simmer for 30 seconds, stir carefully.
  • Drain pasta and rinse under cold water before adding your favorite sauce.

How to store keto pasta noodles:

These keto noodles are best used right away but can be stored in an airtight container in the fridge for a week or in the freezer for up to three months.

They are perfect to pair with your favorite low carb pasta sauce and topped with shredded cheese.
