This low carb meatloaf recipe is one of my favorite keto recipes to make for the whole family. It’s even better than traditional meatloaf recipes and makes the perfect low carb comfort food.

Easy keto meatloaf:

Ingredients:
- 1 lb lean ground beef
- 1/4 onion, diced
- 1 cup sugar free tomato sauce, divided
- 1 egg
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 2 tbsp fresh parsley, for garnish
Tip: a 50/50 mixture of beef and ground pork or ground sausage is also great to use in this recipe.
Costco has the best deal on ground beef, I buy a large pack at least once a month. For best results be sure to mix this with ground pork from the grocery store.
Directions:
1. In a large bowl, combine all of the ingredients except 1/2 cup of pasta sauce. Mix well.
2. Form a large loaf shape from the meat mixture.
3. Place in a greased loaf pan and into a preheated oven at 350 degrees F.
Tip: alternatively place the meatloaf mixture on a tin foil covered baking sheet pan.
4. Cook for 50 minutes or until the internal temperature reaches 160 degrees F with a meat thermometer in the center of the meatloaf.
5. Remove the meatloaf from the oven and top with the remaining sauce.
This easy recipe serves 6 and is only two net carbs per serving. Try pairing it with a side dish like mashed cauliflower, brussels sprouts or green beans for the perfect keto meal.
How to store meatloaf:
Cover this dish in plastic wrap or store in an airtight container for up to one week in the refrigerator.
