Vanilla Spice Poke Cake

  • 1 box of Spice Cake {dry, not prepared}
  • 1⅓ cup milk
  • ½ cup applesauce
  • 3 eggs
  • Instant vanilla pudding mix {four serving size}
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Reserve for topping:

  • 2 cups milk
  1. Mix dry ingredients, add wet ingredients and combine well.
  2. Grease and flour a bundt pan.
  3. Pour batter into the pan and bake for 40-45 minutes at 350.
  4. Remove from the oven and poke holes into the cake using a bamboo skewer.
  5. While the cake cools, mix the vanilla pudding and milk.
  6. Immediately pour the pudding over the cake before it has a chance to set.
  7. Allow for the pudding to be absorbed into the cake {about 20 minutes} before turning over to remove it from the bundt pan.
  8. Drizzle with icing sugar and caramel sauce before serving.
