There is just something about this stuffed chicken recipe that I absolutely love. I think that it’s the combination of delicious ingredients. I mean, Havarti cheese and fresh asparagus?! That’s a huge winner in my books! Especially if you are lucky enough to come across fresh, local asparagus in the spring. We have a great farmers market here and I am sure to grab a few bussels of asparagus just for this recipe!
If you can’t find local asparagus, don’t fret! Costco often has fresh asparagus in stock and that’s where I get my Havarti cheese. Havarti is a must in this recipe, the way that it melts when stuffed in chicken and grilled on the BBQ is perfection.
Ingredients:
4 boneless, skinless chicken breasts
120g Havarti cheese, divided into 4 portions
12 medium asparagus stalks, 3 for each chicken
50g sun dried tomatoes (optional)
Club House Montreal Chicken Seasoning
Directions:
Cut chicken breast to butterfly open. Use a meat mallet to flatten the chicken. Layer cheese and asparagus on the chicken. Fold chicken over ingredients and fasten closed with toothpicks if needed. Cover with chicken seasoning. Grill for 10-15 minutes (each side) over medium heat.
Havarti and Asparagus Stuffed Chicken
Ingredients

- Cover with chicken seasoning.
- Grill for 10-15 minutes (each side) over medium heat.
I go a step further and wrap each stuffed chicken breast in tinfoil for grilling on the BBQ. I also throw these in the freezer to use later for quick and easy camping meals. You can place them in the oven and cook them that way instead of the BBQ, the choice is yours.
