I love creating recipes with whatever I have on hand and using up ingredients found in the garden or pantry. This vegetarian borscht recipe is one that is perfect for that kind of thing!

I was given a bushel of fresh beets from a friend and decided to create a giant pot of soup to share. A sort of “Stone Soup”, if you will. After creating this recipe and serving the family dinner, I portioned out the extra soup into mason jars to dole out to friends. It was a huge hit!

What is borscht?

If you aren’t familiar, borscht is a traditional beet soup that is known for its sour taste. While it is popular in several Slavic countries, it is most often associated with Russian and Ukrainian cuisine.

If you grew up eating borscht, you probably have a family recipe that has been passed down through the generations.

Full of root vegetables, this popular soup is a great way to make use of all the fresh fall produce that is available as the weather starts to cool. And the beet juice turns it the most beautiful purple-red color!

I love to garnish my borscht with lots of fresh dill and sour cream. And you have to eat it with bread!

Russian borscht is traditionally accompanied by a hearty rye bread, while Ukrainian borscht is mostly served with Ukrainian garlic bread. With our family, I often make biscuits or buns.

Vegetarian Borscht Soup Recipe:

Isaiah was my sous chef and had a great time dicing the vegetables with our trusty Pampered Chef chopper. We washed, peeled, and diced the vegetables before adding them to a large stock pot.

As the soup cooked down, I added more chicken stock as needed. Be sure to keep an eye on your soup as it cooks and add more stock if necessary. As we made the recipe, the amount of soup just kept getting bigger and bigger, until we had plenty to share!

Ingredients:

  • 5 celery stalks, diced
  • 6 medium carrots, peeled and diced
  • 1 onion, diced
  • 1/2 red cabbage, diced
  • 5 small red beets, peeled and diced (I love to pick up fresh beets at our local farmer’s market.)
  • 28 oz can diced tomatoes
  • 3 Tbsp parsley
  • 3 Tbsp dill
  • 2 tsp garlic
  • 8 cups chicken stock (Homemade is always wonderful, but store-bought works just as well.)
Hearty Borscht Soup Recipe

Directions:

  1. Combine all ingredients in a large heavy-bottomed pot.
  2. Cook on medium for 40 minutes, until well combined and all ingredients are well done.
  3. Serve with a dollop of sour cream.

Alternate Ingredients:

  • Red meat, such as stew beef
  • Beef broth
  • Red kidney beans
  • Green cabbage
  • Yellow potatoes
  • Make use of the whole beet by adding in the beet greens
  • Tomato paste
  • Black pepper
  • Bay leaf
  • Fresh herbs
  • Lemon juice
  • Create a completely vegan version of this delicious soup using vegetable stock and garnish with vegan sour cream or cashew cream.

Tips and Tricks:

  • Most soup recipes work equally well in a slow cooker as on the stove. Give it a try!
  • Make your own soup stock at home. You can then freeze it in freezer-safe containers and pull out portions as you need them. You can do this with chicken, beef, or turkey stock.
  • Soup is always great for meal planning. Throw everything in the slow cooker in the morning and dinner is ready and waiting for you.
  • Store leftovers in the fridge in an airtight container.
