Simply put, this salad is made using broccoli as the main ingredient. It’s often combined with savory bacon, onion and cheese.
How to make keto broccoli salad:
Ingredients:
- 1 head of broccoli, broken into bite sized pieces
- 1 red onion, finely diced
- 8 slices of bacon, cooked
- 1/4 cheddar cheese, shredded
- 3 Tbsp sunflower seeds
- 1/2 cup avocado mayonnaise
- 3 Tbsp apple cider vinegar
- 2 Tbsp granulated Swerve sweetener
Directions:
1. Wash the broccoli and cut into bite sized pieces.
2. Cook the bacon and break into pieces.
3. Combine broccoli, bacon, cheddar, onion and seeds into a large mixing bowl.
4. In a small bowl mix together mayonnaise, vinegar and sweetener to create a dressing.
5. Pour the dressing over the broccoli mixture and stir well to combine. Serve.
