But what about those of us who are committed to a low-carb diet and looking for a keto-friendly recipe, so that we can enjoy these delicious treats too? Today, I’m sharing the best keto waffle recipe to solve that dilemma!

Why are keto waffles called “chaffles”?

Keto chaffles are exactly what they sound like, waffles made with cheese as the main ingredient, giving them a much lower carb count than typical waffles have.

Supplies:

Ingredients:

  • 1 cup mozzarella cheese, shredded
  • 2 large eggs
  • 1/4 tsp baking powder
  • 2 Tbsp Swerve confectioners sweetener
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 Tbsp Swerve granulated sweetener
  • 2 Tbsp melted butter

Directions:

1. Preheat the mini waffle maker.

2. In a medium bowl, whisk together cheese, eggs, baking powder, confectioners sweetener, vanilla and half of the cinnamon until well combined.

3. Add 1/4 of the waffle batter to the waffle iron and cook waffles for 3-5 minutes until done to your liking.

4. Repeat until you have made four chaffles.

5. Slice the chaffles into sticks.

6. Drizzle with melted butter and sprinkle with remaining granulated sweetener and cinnamon.

7. Serve immediately.

What makes this waffle recipe low carb/keto?

When someone is following a keto or low carb diet, they are generally looking to avoid regular flour, even whole wheat flour. Traditional waffle recipes generally call for all-purpose flour.

This particular recipe avoids flour all together. The best part is, they only have one net carb per serving!

Other sugar alternatives:

  • Stevia is made from the Stevia leaf. I like to use both the granulated and powdered version of this in my recipes.  
  • Monk Fruit extract is made from Monk fruit. This is another sugar substitute that is low on the glycemic index.
  • Erythritol is a sugar alcohol and another popular low carb sweetener that can be used in baking.

Low carb flour alternatives:

  • Almond flour is my personal favourite for consistency and flavour. I like to purchase the Kirkland brand almond flour from Costco.
  • Coconut flour can sometimes be crumbly in my experience but good in combination with almond flour. I like the Red Mill brand.
  • Rice flour is my least favourite in terms of consistency, but a great alternative for those who may have allergies.

Tips and tricks:

  • Sugar and flour alternatives, combined with milk substitutes such as coconut or almond milk, can also be used to create a keto pancake recipe. 
  • Try this recipe several times, using different substitutions, to find the combination that creates the best keto waffles for you. Your whole family will love your experiments!
  • You don’t have to stick to mini waffles! Try using a traditional waffle maker or a belgian waffle maker to make these easy keto waffles.
  • To prevent sticking, brush a little coconut oil onto your waffle maker before adding the batter.
  • Turn these into keto protein waffles by adding some of your favourite keto protein powder to the dry ingredients.
  • Make up a double batch to keep on hand for a quick low carb breakfast option.

Topping suggestions:

  • A drizzle of low carb or keto maple syrup is always a good idea.
  • Top with cream cheese.
  • Spread on the nut butter of your choice. Peanut and almond butter are my go-tos.
  • Whip up some heavy cream and add fresh fruit.
  • Substitute 1/2 tsp pumpkin spice for the cinnamon.

How to store:

For best results, these waffles should be eaten the same day. If you do have any leftover waffles, flash freeze them on a baking sheet, then store them in an airtight container or ziplock bag for up to three months.

Just thaw and serve. For crispier waffles, they can easily be reheated individually in a toaster oven.
