Hello my friends! I wanted to pop in real quick today to share my Keto journey. I began a Ketogenic Lifestyle last year (at Christmas time) and have seen fantastic results! Keto seems to be the “hot” diet this year and while it is not for everyone I am beyond grateful to have found it. Pictured above is a Bacon Mushroom Pesto Cauliflower Crust Pizza.
A friend told me about Keto and her success with this plan in December. I purchased a few books on Keto and did a ton of research. A TON. What I liked about this lifestyle is that it essentially took everything that I have strived to do in the past and helped it to “make sense”. What really hit home for me was understanding that our bodies burn fuel to work. First they burn sugar, then carbs (eg. gluten) and then fat. Soooo if I want to get my body to burn fat I simply need to remove sugar and reduce carbs. BAM! I have gone gluten free in the past so I knew that doing it again was doable and I KNOW that sugar is the enemy so I really had nothing to hold me back. Pictured above is a Cashew Chicken Stir Fry.
Plus what I eat on Keto is what I LOVE! Think breakfast and BBQ foods. Yum right?! I can still have my Starbucks latte and glass of wine if I want. It’s all about understanding what my body is burning for energy and budgeting the rest. Unlike many Keto diets, I follow a high protein, moderate fat, low carb version of this Ketogenic Lifestyle. No butter coffee here. Just REAL food. Meat, veggies and dairy. Keeping it simple works best for me. Pictured above is an Egg Bite, meal prepped in a muffin tin.
This is a typical days worth of meals. Bacon and egg bites, spaghetti with zucchini noodles and green beans with chicken breast.
Another day consisted of a giant mushroom and cheese omelet, adult luncheable and lettuce wrap tacos.
This was my favorite meal so far. Green beans, 8oz steak and “loaded” brocoli. SO GOOD!!!
The key to any healthy lifestyle in my opinion if finding one that aligns with what you already do. Simply shifting a few things and committing to staying on track.

Oh!! I should say that at the six week mark I have lost 25 pounds and 20 inches. Whoop!
