I love how easy these holiday cookies are to make! They seriously only require five simple ingredients that you probably already have in your kitchen.
Keto Snowball Cookie Recipe:
These cookies are also known as Mexican wedding cookies or Russian tea cakes. They make the most amazing keto christmas cookies for the holiday season too!
Ingredients:
- 2 1/2 cups almond flour
- 3/4 cups powdered Monk Fruit sweetener, divided
- 1/2 cup butter, room temperature
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- I use powdered monk fruit sweetener for this recipe but any kind of powdered, sugar-free sweetener would work! The ingredients can be mixed by hand, using a hand mixer, stand mixer or food processor.
Directions:
1. Preheat the oven to 350 degrees f. Line a baking sheet with parchment paper.
2. In a large bowl combine the butter and 1/2 cup powdered sweetener.
3. Add dry ingredients to the butter mixture. Add vanilla and mix until a soft dough forms.
4. Using a small cookie scooper, scoop the cookie dough and roll into 24 balls. Place them on the prepared cookie sheet, spacing 1-inch apart.
5. Bake for 10 minutes, then let cool slightly before transferring to a cooling wire rack.
6. Dust cookies with the remaining powdered sweetener.
Allow the cookies to cool completely, they will taste undercooked if you eat them while they’re still warm.
This recipe makes about 24 easy keto cookies at under 2 net carbs each. They can be stored in an airtight container for up to a week.

Other sugar alternatives:
- Stevia is made from the Stevia leaf, I like to use both the granulated and powdered version of this in my recipes.
- Monk Fruit extract is made from Monk fruit, this is another sugar substitute that is low on the glycemic index.
- Erythritol is a sugar alcohol and another popular low carb sweetener that can be used in baking.
While these are almond flour cookies, many keto recipes call for flour alternatives. Check these out on your low carb diet.
Low carb flours:
- Almond flour is my personal favorite for consistency and flavour. I like to purchase the Kirkland brand almond flour from Costco.
- Coconut flour can sometimes be crumbly in my experience but good in combination with almond flour. I like the Red Mill brand.
- Rice flour is my least favorite in terms of consistency but a great alternative for those who may have allergies.
