Last summer this Loaded Campfire Cauliflower recipe was a staple in our camping meals.  I have been waiting for months to share the recipe with you!

By the time I got a chance to photograph it for the blog, winter had set in so I’ve been saving it until now!  So, TA DA!!  Here it is, one of my absolute favorite camping recipes that you are sure to LOVE!  Be sure to check out my Etsy Shop where you can now find personalized camping gear!

I love camping meals that are easy to prepare and make ahead of time and this one is no exception.  Perfect for preparing and then packing on your next trip.

Tips for camping meal preparation:

  • Prepare meals in advance at home whenever possible.  Leave most of the mess at home where running water is more accessible and clean up is easier.  Trust me on this one!
  • Create “one pot” family style meals for quick dinners that don’t require a lot of thought. 
  • Use tinfoil packets, foil pie pans or camp cookers. These tools help to make clean up a breeze!
  • Pack ingredients in 1 gallon size ziploc bags for flexible storage in small fridges and coolers.
  • Plan meals that use similar ingredients to help make packing and planning easy.  These Cheesy Vegetable Campfire Dip, Loaded Campfire Potatoes and Tinfoil Packet Nacho Dip recipes are some of my favorites.

Following a ketogenic lifestyle, I have modified many of my favorite recipes to be low carb.  By simply swapping cauliflower for potatoes in this Loaded Campfire Potatoes recipe I have created a yummy keto meal that is perfect for camping.  Not a fan of cauliflower?  Try subbing diced celery root or  jicama (both low carb). 

Just be sure to boil them before cooking over the campfire or bar-b-cue.  I like to steam the cauliflower first at home before preparing and packaging this recipe for camping.  It’s not necessary but it makes cooking time faster in the long run.

Tips for making Camping Freezer Meals:

  • Use 1 gallon, large freezer bags.  Label bags with the date, recipe and cooking instructions
  • Lay ingredients flat in the bag for easier storage in the freezer.
  • Defrost meals in the refrigerator and place into tinfoil packet for cooking or dump onto a skillet.
  • Store meals for up to three months in the freezer.

How to make this loaded campfire cauliflower:

  • Cook cauliflower until al dente (do not over cook), chop
  • Place cauliflower, cheese, bacon and butter into a large freezer safe plastic bag.
  • Freeze until ready to use.
  • When ready to cook, defrost and empty contents into a tin foil packet.
  • Wrap securely with foil and place onto the cooking surface.
  • Cook for 30-40 minutes on medium heat.
  • Top with green onion, sour cream and s&p.

Tips for making tinfoil packets:

  • Cut two pieces of aluminum foil large enough to cover the entire meal (about 12″).  Layer them one on top of the other.  Optional: spray the interior with non stick spray or line with parchment paper.
  • Place recipe ingredients in the center.  Bring up the longer edges of the foil and fold together.  Grasp one end and roll it up, repeat with the other end.
  • Alternatively foil pie plates may be used to cook foil packet meals.  Simply place the recipe ingredients into the pie plate and cover with aluminum foil before cooking.
  • For best results cook the foil packet on a grill over the open fire.
  • Use caution when handling the foil packet as it can become hot while cooking.

Ingredients

  • 1 head of cauliflower, steamed aldente and diced
  • 1 cup shredded cheddar cheese
  • 2 Tbsp bacon bits
  • 2 stalks diced green onion
  • 2 tsp butter
  • salt and pepper
  • sour cream (optional)

Instructions

  1. Cook cauliflower until al dente (do not over cook), chop
  2. Place cauliflower, cheese, bacon and butter into a large freezer safe plastic bag.
  3. Freeze until ready to use.
