One of my favorite things to do is create fun food for the whole family to enjoy any time of year. Easter is no exception!

WHAT ARE RICE KRISPIE TREATS?

Rice krispie treats are primarily made of rice krispies cereal, melted butter and mini marshmallows. These krispy treats are so much fun for kids of all ages to make and add to an Easter dessert table.

They’d be great for other events like a birthday party or bridal shower too! The possibilities are endless, in fact there are dozens of fun rice krispie treat ideas on the blog.

I love how pretty this fun dessert looks with the pretty mini eggs and white chocolate drizzel! It can easily be adapted by simply using different colored chocolate or candy.

Try using: pretzel sticks, marshmallow peeps, pink or blue candy melts, M&Ms, pink candy, jelly beans, chocolate chips, festive sprinkles or more!

Mini Egg Rice Krispie Ingredients

Ingredients:

  • 5 tbsp unsalted butter
  • 7 cups mini marshmallows, divided
  • 1 tsp pure vanilla extract
  • 1/4 tsp kosher salt
  • 6 cups Rice Krispie cereal
  • 1 1/2 cup Cadbury mini eggs, chopped & divided
  • 1 cup white chocolate candy melts

Directions:

1.  Butter or spray the inside of a 9×9 baking dish with non stick spray.

2.  In a large saucepan, melt the butter over medium heat. Once melted, add 6 cups of the mini marshmallows.

3. Reduce heat to low and continue stirring until the marshmallows are melted. Remove from the heat and stir in the vanilla and salt.

4.  Add the rice krispie cereal and the remaining 1 cup of marshmallows. Gently stir until combined.

5. Add 1 cup of mini eggs and fold them in. Be careful not to tear into the rice krispie mixture too much and melt the mini eggs.

6.  Using a buttered spatula, gently press the rice krispie into the pan so that it is spread out evenly. Set aside.

Tip: the harder you press the harder the treats will be.

7. In a small microwave safe bowl, melt the white chocolate in the microwave in short bursts of 15 seconds, stirring each time.

8. Drizzle the melted white chocolate over the bars. Sprinkle the remaining 1/2 cup of mini eggs on top.

9. Allow the bars to set at room temperature for 1 hour.

10. Cut into 9 large bars or 18 small bars.

I have made this easy dessert before where I used an easter egg shape and covered the rice krispie cereal treats with frosting in a piping bag and crushed candy eggs. They looked and tasted just as good so really, have fun with it!

TIPS FOR MAKING THESE EASY EASTER TREATS:

  • Use Wilton candy melts for best results, the wafer chocolate melts the best. Add one teaspoon of coconut oil to other melted chocolate chips to help them melt and pour better.
  • Place the rice krispie bars in the fridge to cool quickly before serving.
  • Store these yummy treats in a large freezer bag or airtight container for up to three months at room temperature. They can also be stored in the fridge to prevent the chocolate from melting.
