Cookie Monster Cake Ingredients

Ingredients:

Cheesecake –

  • 2- 8 ounces full fat cream cheese (room temperature)
  • 1 cup powdered sugar (sifted)
  • 1 1⁄2 cup heavy whipping cream (cold)
  • 2 tsp vanilla extract
  • 1⁄2 tsp lemon extract
  • 2 tablespoons blue gel food coloring

Crust –

  • 15 ounces chocolate chip cookies (crushed) any store bought, soft/chewy
  • 1⁄2 cup of melted butter (slightly cool)

Directions:

1.Set aside a few of the cookies to add as toppings. In a food processor, crush the 3⁄4 of the cookies and place in a mixing bowl. Add the melted butter to the crushed cookies and mix with a fork. Make sure the cookies are fully coated and mixed with the butter.

2. Pour the cookie mixture into the springform pan and gently press down with the bottom of a flat glass. Place in the refrigerator to chill while making the cheesecake.

3. In a large bowl, combine the cream cheese, powdered sugar, vanilla, and lemon extract. Mix with a hand mixer until smooth. Set aside.

4. Using a whip attachment, whip the heavy cream and the blue food gel until it thickens. Fold it into the cream cheese mixture gently. This will take approximately 2- 3 minutes. Fold until you no longer see streaks of blue heavy whipping cream.

5. Scoop the cheesecake mixture into the springform pan and smooth with a spatula. Add cookies whole and some crumbled to the top of the cake. Cover with plastic wrap and place in the refrigerator. Chill for 4-5 hours.

6. After the cheesecake has chilled for 4-5 hours, carefully remove the clasp on the springform pan, then slice as needed for serving.

Tips & Tricks:

  • I like to chill the mixing bowl that I am using to mix the heavy whipping cream. This helps it come together faster.
  • You can substitute Cool Whip if you don’t have heavy whipping cream. If you do, then you will only need to fold it into the cream cheese mixture. Do not re-whip the Cool Whip.
  • Use chocolate syrup and mini chocolate chips as an added topping, if desired.
  • Making your own soft chocolate chip cookies is an option but, to save myself time, I use premade, store-bought, soft batch cookies. Using the regular chocolate chip cookies will take longer to combine and set.
  • It can be difficult to achieve a true Cookie Monster blue with traditional blue food coloring. Be sure to use gel food coloring instead.
  • I prefer to chill my no-bake desserts overnight, unless I’m using them the same day.
  • Wipe the serving knife after each slice to get clean slices.
  • Keep the cheesecake refrigerated until ready to serve. Can be frozen for up to 1 month. Wrap securely in heavy plastic wrap several times and place in a large plastic bag.

  • Make a Cookie Monster birthday cake. Add crumbled cookies in between the layers of cake. Frost with blue icing. Press more cookie crumbs around the bottom of the cake. Perfect for birthday parties!
  • Use a grass tip on your piping bag when frosting Cookie Monster cupcakes or cakes to create a furry texture.
  • Try Cookie Monster donuts, using a blue glaze.
  • Up the cookie factor even more with a chocolate chip cookie dough frosting.

  • Kit Kats or any other kind of chocolate bar you like.
  • Add Cookie Monster’s eyes using large marshmallows or white chocolate melts.
  • Black icing is perfect for drawing on facial features.
  • Include a thin layer of chocolate ganache between the crust and filling.
  • Add extra whipped cream or blue frosting to the top of the cheesecake.
  • Use red food gel to make an Elmo cake instead.
