Peanut Butter Rice Krispie Bars

These peanut butter rice krispie bars are super easy to make and absolutely delicious! This simple dessert recipe is a family favorite.

WHAT ARE RICE KRISPIE TREATS?

Rice krispie treats are primarily made of rice krispies cereal, melted butter and mini marshmallows. These chocolate covered treats are made even easier by simply using pre made cereal treats, dipping them in dark chocolate and then covering them milk and white chocolate drizzle.

I brought these peanut butter rice crispie bars to our PAC meeting last week and they disappeared within seconds! All of the moms asked for the recipe and I was happy to oblige. 

My favorite recipes are ones that are super simple and quick to make and this one fits the bill! Keep these four ingredients in the pantry and you will always have a go-to square to make and bring to your next event or function! 

Peanut Butter Rice Krispie Bars

TIPS FOR MAKING KRISPIE TREATS:

  • Add one teaspoon of coconut oil to other chocolate chips to help them melt and pour better.
  • Place the chocolate in the fridge or freezer to completely cool before serving.
  • Store these yummy treats in a large freezer bag or airtight container for up to three months at room temperature. They can also be stored in the fridge to prevent the chocolate from melting.

Peanut Butter Rice Krispie Bars

How to make peanut butter rice krispies:

Ingredients:

  • 3 Tbsp unsalted butter
  • 5 cups miniature marshmallows
  • 6 cups Rice Krispies cereal
  • 1/2 cup creamy peanut butter
  • 1 cup semi sweet chocolate chips
  • 1 tsp coconut oil

Directions:

1. In a large pot melt butter over medium heat. Add marshmallows and stir until completely melted.

Remove the marshmallow mixture from the heat and mix in the peanut butter.

2. Add rice krispie cereal to the peanut butter mixture. Stir until the cereal mixture is well combined.

3. Using a rubber spatula or wax paper, evenly press mixture into a 9 x 12 inch baking dish coated with nonstick spray.

4. In a medium microwave safe bowl melt the chocolate chips and coconut oil. Heat in the microwave at 15 second intervals, stirring in between until the chocolate is completely smooth.

5. Spread the melted chocolate over the peanut butter rice krispies and place the dish in the fridge to cool for an hour.

6. When the chocolate topping has completely hardened, remove the crispy treats from the pan and cut into 2″ bars.
