These easy peanut butter cookies are my absolute favorite – made with simple ingredients and full of soft, rich peanut butter flavor!

What makes cookies chewy or crispy?
- White sugar makes cookies crispier while brown sugar makes them fluffier.
- Using or adding egg yolks can lead to more moist, chewy cookies.
- While these peanut butter cookies are made without brown sugar, you can substitute brown sugar for white sugar if you like.
This recipe makes the best peanut butter cookies – fun for kids of all ages to make and take to holiday parties or events. My kids enjoy the decorating part the most, second only to the eating part of course.
How to make these peanut butter cookies:

Ingredients:
- 1 cup all purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- 1/2 cup unsalted butter
- ½ cup crunchy peanut butter*
- 1/2 cup white sugar
- 1 large egg
- ¼ tsp salt
- 1 cup Duncan Hines vanilla frosting
- 2 Tbsp smooth peanut butter
- ¼ cup Reeses Pieces
- ½ cup mini Reeses peanut butter cups, roughly chopped
* I used Fatso brand natural peanut butter but any crunchy peanut butter will work.
Directions:
1. Preheat the oven to 350 degrees f. Line a cookie sheet with parchment paper.
2. In a stand mixer or a large bowl with an electric mixer, cream together butter and sugar.
3. Add egg and peanut butter and continue to mix on low speed.
4. Add dry ingredients to the wet ingredients slowly and combine until a soft dough forms.
5. Drop 8 to 10 large scoops of dough onto the prepared baking sheets. Leave at least 2″ between each cookie dough ball.
Tip: I like to use a large cookie scoop for this to get the perfect sized jumbo cookie.
6. For best results, bake cookies at 350 for 12 minutes or until the edges start to brown. Place on a wire rack to allow the cookies to cool quickly.
7. In a small bowl combine frosting and 2 tablespoons of peanut butter.
8. Scoop the frosting mixture into a piping bag with 1A tip and cover each cookie with the frosting.
Tip: a plastic bag with the tip cut off works for this too!
9. Roughly chop up the mini Reeses cups.
10. Place the Reese’s pieces and peanut butter cups on top of the cookies.
For chewier, softer cookies simply adjust the baking time and take the cookies out of the oven one minute sooner. Just be sure to allow the cookies to cool completely before decorating.
How to store these delicious cookies:
Store these sweet treats in a large freezer bag or airtight container at room temperature for a week or in the freezer for up to three months.
