Soft Caramel Molasses Cookie Recipe

These soft molasses cookies are some of my absolute favorites! The creamy vanilla frosting and caramel drizzle combo is to die for, seriously.
I’m a huge fan of creating treats for every occasion, especially delicious ones like these. I added animal cracker cookies to these ones, making them perfect for a kids party, baby shower or gifting to the animal cracker lover in your life!
Why use molasses cookie dough?
This soft molasses cookie recipe is super versatile and easy to make with only a few ingredients from the grocery store. Start with unsalted butter, granulated sugar, all purpose flour and a dollop of blackstrap molasses.

This Animal Cracker Cookie Recipe is totally fun for kids to make and eat with the adorable addition of exotic animal cookies on top. Of course, for an exclusive adult version that is still delicious, just leave off the crackers.
How to make these chewy molasses cookies:

Ingredients:
- 1 cup flour
- ½ tsp baking soda
- ⅓ cup butter
- ½ cup white sugar
- 1 egg
- ⅛ cup molasses
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- ¼ tsp ground cloves
- ⅛ tsp salt
- 1 cup Duncan Hynes vanilla frosting
- 12 Werther’s soft caramels
- 1 Tbsp cream
- ½ cup animal cracker cookies (optional)
Directions:
1. Preheat the oven to 350 degrees f. Line a cookie sheet with parchment paper.
2. In a stand mixer or a large bowl with an electric mixer, cream together butter and sugar.
3. Add egg and dark molasses and continue to mix on low speed.
4. Add dry ingredients to the wet ingredients slowly and combine until a soft dough forms.
5. Drop 8 to 10 large scoops of dough onto the prepared baking sheet. Leave at least 2″ between the cookie dough balls.
Tip: I like to use a large cookie scoop for this.
6. Bake at 350 for 12 minutes or until the center is set. Place on a wire rack to allow the cookies to cool quickly.
7. Scoop the frosting into a piping bag with 1A tip and cover each cookie with the icing.
Tip: a plastic bag with the tip cut off works too!
8. In a medium bowl combine caramels and cream.
9. Melt the caramels in the microwave in 15 second intervals, stirring in between until a smooth caramel sauce is created.
10. Drizzle the caramel sauce over the cookies.
11. Top each cookie with an animal cracker (optional).
For chewier, softer cookies simply adjust the baking time and take the cookies out of the oven one minute sooner. Just be sure to allow the cookies to cool completely before decorating.
How to store these delicious cookies:
Store these sweet treats in a large freezer bag or airtight container at room temperature for a week or in the freezer for up to three months.
This recipe makes about 8 large cookies with crisp edges, a chewy center and vanilla frosting. Not only do they look delicious, they taste amazing too!
