I have another great shrimp recipe for you! My little guys love shrimp so I have been having fun playing around with a few new recipes. This one is inspired by an episode of Road Grill on the Food Network.
You’ll start by creating a marinade that does double duty as a fab dipping sauce.
Here are the goods:
1 ripe mango
2 garlic onions
1 small hot pepper {seeds removed}
1 tbsp fresh cilantro
1 tsp minced ginger
1/3 cup white wine vinegar
Juice from 1/2 lime
Pinch of salt
60-80 fresh, peeled shrimp
Finely dice the mango, onion, pepper and cilantro.
Combine all ingredients.
Blend in a food processor or blender until smooth.
In a freezer bag combine shrimp and marinade. Refrigerate for at least and hour. Be sure to reserve 1/4 cup of sauce for dipping. At this point you could load these in the cooler to take camping and grill later.
Using bamboo skewers {that have been soaking in water}, skewer two shrimp opposite to each other ~ creating a lollipop effect. The kids loved this!
Place the shrimp skewers on an oiled, hot barbecue. Use the front of the grill and have the bamboo skewers hang over the edge to help prevent them from burning. Cook for about 5 minutes on each side.
Serve with reserved dipping sauce.
