Today, I want to share a strawberries and cream version that is absolutely amazing! This strawberry poke cake recipe is such an easy dessert to put together. It has all the flavors of a classic strawberry shortcake, in an easy-to-serve cake form.
Another bonus to this yummy cake is how versatile it is. It’s kind of like the little black dress of cakes.
It is perfect for serving at casual get-togethers or as a fun weeknight treat, but can just as easily be served at special occasions, like holiday dinners or birthday parties. You’ll see what I mean when you try it.

EQUIPMENT:
Strawberry Poke Cake:
Ingredients:
- 1 pkg Betty Crocker white cake mix, prepared
- 1 pkg strawberry Jello
- 1 cup boiling water
- 2 cups heavy whipping cream
- ¼ cup powdered sugar
- 1 lb fresh strawberries, sliced
Directions:
1. Preheat the oven to 350 F. Spray the bottom of a 9×9-inch pan with cooking spray.
2. Prepare white boxed cake mix. In a large bowl, beat cake mix, water, oil, and egg whites with an electric mixer on low speed for 30 seconds. Beat on medium speed for 2 more minutes, scraping the bowl occasionally. Pour cake batter into the prepared baking dish.
3. Bake cake for 30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool on a wire rack for 20 minutes.
4. Meanwhile, in a small bowl, pour boiling water over Jello powder. Stir until gelatin is completely dissolved.
5. Poke holes in the cake, about every inch, with the handle of a wooden spoon or wooden skewer.
6. Carefully pour strawberry gelatin mixture evenly over top of cake. Cool completely, about 1 hour.
7. In a medium bowl, mix whipping cream and sugar until stiff peaks form.
8. Spread whipped cream over the top of the cake. Garnish cake with sliced strawberries.
Substitutions:
- Cool Whip can be used instead of fresh whipped cream.
- Instead of Jello, soak your cake with sweetened condensed milk, strawberry sauce, chocolate sauce, caramel, or pudding.
- You can replace the powdered sugar with instant pudding mix when making the whipped cream topping.
- Use any combination of Jello and cake flavor that you like best. For example, try a lemon poke cake, with lemon cake mix and lemon Jello. Make a banana pudding poke cake, with yellow cake mix and banana instant pudding. You get the idea.
- Add a layer of pie filling to your poke cake.
Tips and Tricks:
- For best results, let this cake rest in the fridge for at least a couple of hours. This time allows all those yummy flavors to meld together.
- I like using a box cake mix with this recipe because it is such a simple shortcut. Feel free to use your favorite scratch white cake recipe though.
- Any leftover strawberry poke cake should be stored in the fridge, in an airtight container or covered tightly with plastic wrap. It will last for approximately three days.
