We are huge fans of banana bread and banana pancakes around here. These Banana Chocolate Chip Muffins have been a staple in the boys’ lunch boxes for years.
This recipes used a sugar-free granulated sweetener and sugar-free chocolate baking chips, making it a great recipe for those who are trying to limit the amount of sugar in their diet.
How can I ripen bananas quickly?
This recipe calls for overripe bananas, the riper the better. To ripen your bananas quickly, place them into a paper bag overnight. The bag traps ethylene, the element that makes for ripening bananas.
You can also try heating the bananas in the microwave or oven to cook and soften them more quickly.
This easy banana bread is perfectly moist, soft and flavourful. It’s an awesome recipe to use up those extra bananas without using added sugar.
How to make sugar free banana bread:
Ingredients:
- 1 3/4 cups all purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/3 cup unsalted butter, melted
- 2/3 cup granulated Swerve sweetener
- 1 tsp vanilla extract
- 2 large eggs
- 1 1/2 cup mashed bananas, about 3 medium bananas
- 1/2 cup Lily’s dark chocolate baking chips, reserve half
Directions:
1. Preheat the oven to 400 degrees F.
2. Line a standard loaf pan with parchment paper.
3. In a large bowl with an electric mixer or stand mixer with paddle attachment, combine dry ingredients.
4. In a medium bowl cream melted butter and Swerve together. Add eggs and vanilla to the mixing bowl and combine well.
5. Add the wet ingredients to the flour mixture and mix at medium speed until a lumpy batter forms.
6. Fold in mashed bananas and half of the sugar free chocolate chips.
7. Pour bread batter into the loaf baking pan. Top with reserved chocolate chips.
8. Bake bread for 50-55 minutes until golden brown or until a toothpick inserted comes out clean.
Tip: slightly under bake the loaf for a softer texture in the center.
9. Remove to a wire rack to completely cool.
10. Cut into 1 inch slices for serving.
