Breakfast Casserole Recipe:
Ingredients:
- 6 slices of bacon, cooked
- 8 large eggs
- 1/2 cup milk
- 2 cups frozen tater tots
- 1 cup Tex Mex cheese, shredded
- 1/2 tsp salt and black pepper
- 1 green onion stalk, diced
Directions:
1. Cook the bacon in a large skillet on medium heat until crispy. Set aside.
2. Preheat the oven to 350 degrees f.

3. In a large bowl, combine egg, milk and shredded cheese. Add seasoning of choice.
We like to season this recipe with salt and pepper and often add dill, red pepper flakes, garlic powder or hot sauce. Experimenting with different spices is a great way to personalize this breakfast recipe!

4. Spray a large casserole dish with nonstick cooking spray. Place the tater tots on the bottom of the dish in an even layer.
Tip: A round baking dish that is at least 10″ in diameter or a 9×13″ casserole dish work best.

5. Layer the cooked bacon over the potatoes.

6. Pour egg mixture over the ingredients in the casserole dish.

7. Bake for 40 minutes or until the center is firm and cooked through.

8. Top with diced green onions and serve warm.
