Ingredients:

  • 1 loaf of french bread (cut into the slices)
  • 1-2 tablespoons of olive oil (for brushing one side of the bread)
  • 2 cups of cherry tomatoes, diced (other tomatoes work as well)
  • salt and black pepper to taste
  • handful of chives leaves (cut into tiny pieces)
  • 2 garlic cloves, minced
  • 1 oz parmesan cheese, grated
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil

Directions:

1. Preheat oven to 400 F.

2. Using a pastry brush, brush one side of each slice of bread with olive oil and place them on the baking sheet.

3. Bake bread slices in the oven until golden brown (for about 8-10 minutes).

4. In a large bowl, mix together tomatoes, garlic, chives, balsamic vinegar, 1 tbsp of olive oil, parmesan cheese, salt, and pepper.

Recipe Notes:

  • The tomato mixture can be prepared ahead of time. Just skip adding in the parmesan cheese. When you are ready to serve the bruschetta, top the bread with the bruschetta topping and then sprinkle on the grated parmesan cheese.
  • To give it an even more authentic taste, you can rub both sides of the sliced bread with a clove of garlic before brushing with olive oil. 
  • Instead of chives, other herbs, like fresh basil, can be used. Dried herbs can be used instead of fresh as well.
  • Take your bruschetta to the next level with the addition of goat cheese or a drizzle of balsamic glaze.
