Recipe Notes:

  • The tomato mixture can be prepared ahead of time. Just skip adding in the parmesan cheese. When you are ready to serve the bruschetta, top the bread with the bruschetta topping and then sprinkle on the grated parmesan cheese.
  • To give it an even more authentic taste, you can rub both sides of the sliced bread with a clove of garlic before brushing with olive oil.
  • Instead of chives, other herbs, like fresh basil, can be used. Dried herbs can be used instead of fresh as well.
  • Take your bruschetta to the next level with the addition of goat cheese or a drizzle of balsamic glaze.

Tips and Tricks:

  • Using a good olive oil will give you the best flavor in this recipe.
  • Cherry and grape tomatoes can be used interchangeably in this recipe. You can also try other larger tomatoes, like beefsteak tomatoes or Roma tomatoes.
  • While you don’t have to use a French loaf, sticking with a more dense and rustic bread will help it stand up to those juicy tomatoes. A French baguette, a simple Italian loaf, or sourdough bread are all good choices.
  • If you have made your fresh tomato bruschetta the day before, drain the excess liquid before serving or use a slotted spoon when adding the mixture to the bread. No one enjoys soggy toast!
  • Store any leftovers in the fridge in an airtight container or covered with plastic wrap. It is last for ** days.

Enjoy a little taste of Italy with this delicious bruschetta. You’ll be glad you did!
