Supplies:
- 8 oz glass jars
- Saucepan
- Rubber spatula
- Mixing bowls
- Electric Hand Mixer or Stand Mixer with paddle attachment
- Piping bag
- Scissors
Campagne Cake Recipe:
Ingredients:
- 6-8 Cupcakes, pre made with boxed white cake mix as directed
- 1 cup champagne
- 1 cup granulated sugar
- 3/4 cup salted butter, room temperature
- 3 Tbsp heavy whipping cream
- 3 oz white chocolate chips
- 1/2 tsp vanilla extract
- 2 1/2 cups powdered sugar
- Gold edible glitter or sprinkles
Cake directions:
1. Bake cupcakes. Combine dry ingredients of the cake mix with wet ingredients, as directed, to create a cake batter. Pour into parchment paper lined cake pans or a muffin tin with cupcake liners. Bake as directed and set aside to cool on a wire rack.
2. In a small saucepan, combine champagne and sugar.
3. Heat over medium high heat.
4. Slowly stir the mixture to dissolve the sugar, let it come to a boil, and then turn the heat down to medium.
5. Allow the mixture to simmer until it reduces by half. About 10-12 minutes.
6. Remove the simple syrup from the heat and allow it to cool.
7. Once the mixture is cool, place it in a small bowl or bottle for pouring.
8. Place the white chocolate chips into a medium bowl and melt them in the microwave. Warm the chocolate in 15 second intervals until melted, stirring in between each interval.
9. Next, place the room temperature butter into a large bowl, whip it with the electric mixer for about 2-3 minutes or until it’s light and fluffy.
10. Add the white chocolate. Fold the chocolate into the butter with a spatula.
11. Now, add the powdered sugar, vanilla extract, and heavy cream to the mixing bowl.
12. Mix all the ingredients using an electric mixer (or in the bowl of a stand mixer) until everything is combined and fluffy.
13. Lastly, add 1 Tbsp of the champagne reduction, more if desired.
14. Mix the ingredients with your electric mixer at low speed until everything is combined and smooth just like frosting.
Note: if the frosting is too runny, add another tablespoon of powdered sugar.
15. Once the frosting is done, place it in a piping bag and secure the end.
Now lets fill the jars!
16. Prepare the jars, cupcakes, champagne syrup and gold sprinkles.
17. Place half of a cupcake into the jar and put 1 tsp of champagne syrup on top of the cake.
18. Next pipe about 1 Tbsp of frosting over the cupcake, then add some of the gold sprinkles.
19. Add the remaining half of the cupcake in the jar, top with more syrup and then pipe the frosting over the top layer.
20. Dust glitter and sprinkles over the frosting before serving.
Makes 6-8 individual champagne cake jars. These can be stored in the fridge for 3-4 days covered in plastic wrap or in an airtight container.
Tips & tricks:
- Depending on the size of your cupcakes, you may need to use more than a half of a cupcake for your layers to fill the jar.
- The cake can be made as is, without jars. Simply create two round cakes and layer them with the champagne and buttercream mixture.
- Champagne flutes or glass cups would work to make individual servings too!
Ingredient alternatives:
- Vanilla cake mix works just as well as white.
- This recipe can be made with sparkling wine or Cider for children and will still taste just as good.
- If you use unsalted butter, add a 1/2 teaspoon of salt while preparing your champagne buttercream frosting.
- Make a strawberry champagne cake with fresh strawberries, strawberry puree or the addition of red food coloring to make a strawberry buttercream.
These beautiful cake jars are the perfect way to serve guests individual little cups of champagne dessert. Be sure to add them to your next party or event!
