This fresh corn salad makes the perfect side dish for summer cookouts! We love to use sweet summer corn cooked on an outdoor grill using this grilled corn in the husk method.
I love how fresh and colorful this salad is but even more so, how freaking easy it is to whip together when we’re hosting a barbecue!

Corn Salad:
Ingredients:
- 4 ears of grilled corn, cooked
- 1 cup cherry tomatoes, halved
- 1 jalapeno pepper, seeded and diced
- 1/2 red bell pepper, diced
- 1/2 red onion, diced
- 1/2 bunch of cilantro, chopped
- 1/2 lime, juiced
- 2 tsp olive oil
- Salt and pepper to taste
Directions:
1. Cut the corn kernels from the corn cobs with a sharp knife. This is done best by holding the corn upright on a cutting board and slicing the kernels off in a downward motion.
2. Into the large mixing bowl combine the corn kernels, red pepper, hot pepper, tomatoes, onion and fresh herbs.
3. Add fresh lime juice, salt and pepper and toss corn mixture, mixing well.
4. Drizzle with a little olive oil to create a light dressing.
