Tips and tricks:
- For a change from traditional ketchup as a condiment, serve with a little sour cream and salsa as toppings.
- Transfer any leftovers into an airtight container, or cover tightly with aluminum foil or plastic wrap. They should be stored in the fridge and will keep for up to 3 days.
- Looking for an easy morning meal? Turn this recipe into a tater tot breakfast casserole by substituting the ground beef mixture with breakfast sausage. Take the meat out of the casings and fry it up with the onion. Add some crumbled bacon on top too! This would be a perfect holiday brunch dish.
- This casserole can easily be made ahead and frozen. Just increase the cooking time to 60 minutes.
Casserole variations:
- Substitute ground turkey or pork for the ground beef.
- The seasonings in the recipe can be adjusted to meet your family’s preferences. Garlic powder, onion powder, chili powder, and worcestershire sauce all make delicious additions.
- Want to add more veggies? Throw in some chopped bell peppers, tomatoes, or mushrooms. You could also make it really easy by using frozen mixed vegetables and spreading them over the top of the beef.
- Try cream of chicken soup, or another of your favorite cream soups, instead of the mushroom.
- Include some parmesan cheese as another flavor boost.
