Whether you prefer a fudgy brownie or a more cake-like brownie, this one-bowl brownie recipe is perfect.

My cast iron skillet brownies call for basic ingredients that you’re sure to already have on hand. You’ll have the perfect dessert with minimal effort. Dress it up for a party during the holiday season or keep it simple when you just need a quick fix for that sweet tooth.

Ingredients:
- 1 Tbsp olive oil
- ¾ cup butter, melted
- 2 cups brown sugar
- ¾ cup cocoa powder
- 1/2 cup all purpose flour
- 1 Tbsp vanilla extract
- 4 eggs
Directions:
1. Preheat oven to 350 degrees F.
2. Season a 9-inch skillet with olive oil.
3. In a large mixing bowl combine butter, sugar and cocoa powder.
4. Add eggs and vanilla extract into cocoa mixture.
5. Stir in flour until batter is well combined.
6. Pour the chocolate mixture into the prepared skillet.
7. Bake in the preheated oven until a toothpick inserted in the centre of the brownie comes out clean, about 45 minutes.
8. Allow to cool before cutting into wedges and serving.
Tips & tricks:
- Vegetable oil can be used if you are concerned about the saturated fat in butter.
- White sugar or maple syrup may work as substitutes for some or all of the brown sugar. The texture of the chocolate brownies will likely be affected though. You may also need to add an extra tablespoon of flour or so to compensate for the extra liquid, if using syrup.
- If you don’t have a cast iron skillet, you can use a regular pan. Use non-stick spray and aluminum foil or parchment paper before you pour batter into the prepared pan.
- Store these brownies in an airtight container at room temperature.
- Easily melt butter or chocolate in the microwave. Place the ingredients in a medium microwave-safe bowl and heat for 30 seconds at a time, stirring thoroughly with a rubber spatula or spoon after each interval, until butter or chocolate melts completely.
How to serve this easy skillet brownie:
- Serve it simply, with just a scoop of vanilla ice cream.
- Swirl some peanut butter through the top of the brownie batter before baking.
- Drizzle with melted chocolate and caramel sauce. Top with a generous dollop of whipped heavy cream.
- For a family-style get-together, place the whole brownie pan and a bunch of spoons in the centre of the table, topped with a few giant scoops of vanilla ice cream.
The only changes I might recommend:
- Extra chocolate! Dark chocolate, semi-sweet chocolate chips, or unsweetened chocolate chunks would make delicious add-ins.
- A little bit of espresso powder or instant coffee granules really brings out the chocolate flavour.
- Try using almond flour for a gluten-free option.
