These fajitas are beyond yummy and quick to make in a cast iron skillet. We often prepare the ingredients in advance and make this recipe while camping. The key is in planning and preparing the vegetables, steak and seasoning in advance.

Skillet Fajita Recipe:

Ingredients:

  • 1 lb sirloin steak, cut into strips
  • Orange bell pepper, sliced
  • Yellow bell pepper, sliced
  • Green bell pepper, sliced
  • 1 medium white onion, sliced
  • 1 Tbsp olive oil
  • 2 Tbsp taco seasoning
  • 6 flour or corn tortillas
  • 1 cup Tex Mex shredded cheese
  • 1/2 cup sour cream
  • 1 cup homemade salsa
  • 1 ripe avocado, sliced
  • 1 jalapeno, sliced (optional)
  • Fresh cilantro, for garnish
  • Lime wedges

We love to make homemade salsa and often use this canned salsa recipe, this classic salsa or mango salsa when making fajitas or tacos.

How to make this steak fajita recipe:

1. Cut steak, peppers and onion into strips. Toss the steak in taco seasoning to coat.

2. Heat a cast-iron skillet on medium-high heat, add tablespoon oil and steak. Cook until the meat is just browned, about 5 minutes.

3. Add bell peppers and onion to the large skillet and cook until onion is opaque.

4. Remove the skillet from the heat and top with jalapenos, cilantro and a squeeze of lime juice.

5. Warm tortillas in a microwave or oven on medium heat.

6. Serve warm straight out of the skillet. Layer a tortilla with the filling and your favorite toppings.

  • What is the best cut of meat? We like to use flank steak or sirloin steak cut into thin strips.
