We cook a lot of meat around here. I mean, really, A LOT! With rapidly growing teenage boys in the house, I am always looking for ways to fill them up and keep them full, without having to spend all day, everyday, in the kitchen.

We have found that one of the best ways to do this is to make a large roast that will provide leftovers for an extra day or two (this is our favorite roast beef recipe).

Making sandwiches is the perfect way to enjoy roast beef leftovers. Sandwiches are fast, simple, and everyone can make theirs just the way they like it.

There are times when it is nice to have a fancied up version of a basic roast beef sandwich though. That’s what today’s recipe is all about.

This roast beef sandwich recipe is really versatile. While it is a quick sandwich to put together, the truffle oil and pine nuts give it an elevated feel.

You can serve this yummy sandwich at home, for lunch or dinner, with potato chips, sweet potato fries, french fries, or salad.

Roast Beef Sandwich

Truffle Roast Beef Recipe:

Ingredients:

  • 1 baguette
  • 4-6 slices of medium-rare roast beef
  • 2 oz arugula
  • 2 tbsp mayonnaise
  • 1 tbsp white truffle oil
  • 1 oz shaved parmesan
  • 1 oz pine nuts
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. In a small bowl, mix the mayonnaise and truffle oil until well combined.

2. Roast the pine nuts in a pan on medium-high heat for about 3-4 minutes, or until golden brown on the outside.

3. Cut the baguette open and spread out the truffle mayonnaise.

4. Add the arugula over the baguette.

5. Add the slices of roast beef.

6. Add the shaved parmesan.

7. Season with salt and pepper.

8. Top off with roasted pine nuts.

9. Cut in half – enjoy.

Substitutions:

  • Try different kinds of bread, like hoagie rolls, French rolls, or garlic bread.
  • We love this roast beef sandwich on a toasted kaiser roll.
  • Use shredded beef instead of sliced roast beef.
  • Add thinly sliced red onion or caramelized onions.
  • Creamy horseradish sauce or horseradish mayo
  • Use remoulade sauce or garlic aioli.
  • Make au jus sauce for dipping.
  • Substitute the parmesan with American cheese, blue cheese, pepper jack cheese, mozzarella cheese, or a slice of provolone.
  • Cream cheese is a great addition!
  • Top the bun with poppy seeds or use hawaiian rolls and make roast beef sliders!
  • Add seasonings like worcestershire sauce, garlic powder, or onion powder.

  • Use our melt in your mouth roast beef recipe for an incredibly delicious, flavorful roast beef. Use a sharp knife to cut thin slices of beef for sandwiches.
  • Toast your sandwich. Once assembled, place the open halves on a cookie sheet and broil for just a few minutes, until the cheese is melted and the bread is lightly golden.
