I particularly love Twix. There is just something about the buttery shortbread base, creamy layer of caramel, and chocolate coating that gets me every time. However, the store-bought versions have so many extra ingredients. I don’t love that.
If you are a Twix bar fan like me, or just have a sweet tooth, these Twix caramel bar cookies are the perfect alternative for you. Personally, I think they taste even better than actual Twix candy bars.
Not only that, but I have complete control over the ingredients. Win-win!
Twix Cookie Bar Recipe
Ingredients:
- ½ cup Butter
- ½ cup White Sugar
- 1 tsp Vanilla Extract
- 1 Egg white
- 1 1/2 cups Flour
- 1 tsp Baking Powder
- 20 soft Caramel Candies (we use Werthers brand)
- 1 tbsp Milk
- 100 g Chocolate Chips
Instructions:
1. Prepare all ingredients.
2. Beat butter and sugar together.
3. Add egg white and vanilla. Mix well.
4. Add the dry ingredients and mix the dough until it starts to come together. You may have to knead it by hand a bit before you can roll it out.
5. Roll out the dough and cut out round shapes with a cookie cutter or small glass.
6. Bake cookies at 425 F for 6-8 minutes. Allow to cool.
7. Melt the caramel candies in the microwave or on the stove top using a water bath or double boiler. Spread or drizzle the caramel over the cookies.
8. Melt the chocolate and milk together in the microwave in 30-second increments. Spread or pour over caramel. Refrigerate until the caramel and chocolate have set.
Notes:
- Easily turn this cookie recipe into copycat Twix bars.
- Line a 8×8 square pan with parchment paper. Press the shortbread layer into the bottom of the pan.
- Poke holes in the top with a fork, then bake at 350 for 20 minutes. Allow the shortbread to cool.
- Add the caramel layer, then the chocolate.
- Allow the caramel and chocolate to set.
- Use the parchment paper to lift the whole thing out of the pan and onto a cutting board.
- With a very sharp knife, cut your finished bars into narrow rectangles.
Tips and Tricks:
- For best results, allow your ingredients to come to room temperature before you start baking.
- Instead of adding milk to your chocolate, you could try coconut oil, heavy cream, or vegetable oil.
- I recommend using good quality chocolate in this recipe. You will taste the difference.
- You can use semi-sweet chocolate, dark chocolate, or milk chocolate chips for your chocolate layer.
- Store these cookies in an airtight container for a week or so. Keep them in a single layer or between wax paper. They can also be frozen and will last for up to 3 months this way.
- Use your favorite shortbread recipe as the cookie base if you want.
