What makes these cookies so great?

The secret is in the instant vanilla pudding mix!  Did you know that dry pudding mix makes for the best chewy cookies?

For best results stick to the original ingredients in the recipe card below.  But here are a few, fun variations if you’d like to experiment next time.

Variations

  • Feel free to use dark chocolate chips, peanut butter chips or white chocolate chips.
  • Roll the dough in sprinkles before baking to make funfetti cookies.
  • Mix powdered sugar and milk to create an easy glaze.

Soft Chocolate Chip Cookies

Ingredients

These chewy pudding cookies start with a few simple ingredients from the grocery store.

  • Unsalted butter, room temperature
  • Granulated white sugar
  • Large egg
  • Pure vanilla extract
  • All-purpose flour
  • Small box vanilla instant pudding mix
  • Baking soda
  • Salt
  • Semi sweet chocolate chips

Instructions

You can make this in the bowl of a stand mixer with the paddle attachment or use a large mixing bowl with a hand mixer.

1. Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper.

2. In a large bowl cream butter and sugar together.

3. Add vanilla and egg.

4. Mix until well combined.

5. Add the dry ingredients to the wet ingredients and mix again.

6. Mix in chocolate chips to form a cookie dough.

7. Use a medium cookie scoop to drop dough balls onto the prepared baking sheet.

8. Bake for 8-10 minutes until the edges just start to turn golden brown.

9. Move to a wire rack to cool and store in an airtight container.

  • 3/4 cup unsalted butter room temperature
  • 1 cup granulated white sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 2/3 cup all-purpose flour
  • 1 small 3.4 oz box vanilla instant pudding mix
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi sweet chocolate chips

Instructions

  • Preheat the oven to 350 and line cookie sheets with parchment paper.

  • Add the vanilla pudding mix to the wet ingredients and mix well.
