My boys are huge fans of regular pancakes, especially on the weekends. I am always trying to come up with creative ideas to change things up a bit in the kitchen – like this delicious banana pancakes recipe.

The addition of mini pancake stacks have been a great idea for our hungry boys! They love to pair these bite-sized pancakes with bananas,

I made this batch especially festive for Valentine’s Day this year with the addition of a bit of red food coloring and cut out heart shaped apples.

What are mini pancakes called?

We simply call them “mini pancakes” but if you are looking for recipe ideas you might try searching silver dollar pancakes, scotch pancakes, pancakes cereal, drop scones or small pancakes. They are all made with simple ingredients, often a combination of; flour, sugar, eggs, milk and salt.

These easy pancakes have quickly become a favorite recipe because of how fun it is to make stacks of tiny pancakes! I love how these fluffy mini pancakes are perfect for special occasions.

How to make the best mini pancakes:

Ingredients:

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 cup milk
  • 1 egg
  • 2 Tbsp butter, melted
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • Red food coloring
  • Apple or strawberries cut into hearts
  • Butter
  • Maple syrup

Tip: the batter for these little pancakes can be made in advance and stored in a mixing bowl in the fridge until ready to use.

Directions:

1. Sift together dry ingredients; flour, sugar, baking powder and salt in a medium bowl.

2. In a separate bowl with a whisk or electric mixer, mix together egg, milk, melted butter and vanilla.

3. Add the wet ingredients to the flour mixture and combine until a thick batter is formed.

4. Add a few drops of red food coloring to turn the pancake mix a lovely shade of pink.

Note: this step can be skipped if you are not making pancakes for Valentine’s Day.

5. Put the pancake batter in a pastry bag or large freezer bag for piping. Cut the tip from the bag when ready to use.

Note: a squeeze bottle can also be used for this step as well.

6. Preheat a large skillet, frying pan or griddle over medium heat.

7. Squeeze tablespoon size drops of batter onto the hot nonstick pan.

8. Cook until the pancake is golden brown on each side, approximately 1 minute.

Tip: look for browning around the edges of the pancake to know that the first side is done and then flip pancakes to cook the second side.

Note: place cooked little mini pancakes on an oven safe plate or baking sheet in the oven on the lowest setting to stay warm while cooking the rest of the pancakes. I like to cover the baby pancakes with paper towel between batches, this is a great way to keep them from becoming too moist.

9. Use a bamboo skewer to create festive stacks of pancakes and place a heart shaped apple on top.

10. Top with butter and a drizzle of maple syrup for serving.

These are beautifully served with fresh apple slices but you could also add; whipped cream, peanut butter, brown sugar, fresh fruit, lemon zest or a simple drizzle of honey.

This recipe makes about 24 perfectly mini pancakes . You can easily create a double batch for larger groups or a hungry crowd of teenagers.

How to store pancakes:

These are actually a great make ahead breakfast for busy mornings! Simply store leftover pancakes in a large freezer bag or airtight container for a week in the fridge or in the freezer for up to three months. You can also cover a plate in wax paper at room temperature while waiting to serve.
