Vanilla Spice Poke Cake

There is just something about fall that puts me in the mood for baking.  One of my favorite things about this time of year is that the weather begins to cool down enough to start using the oven again.  This recipe gives you those warm and fuzzy fall feelings while making the house smell delicious.

Vanilla Spice Poke Cake

  • 1 box of Spice Cake {dry not prepared}
  • 1 1/3 cup milk
  • 1/2 cup applesauce
  • 3 eggs
  • Instant vanilla pudding mix {four serving size}
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Reserve for topping:
  • Instant vanilla pudding mix {four serving size}
  • 2 cups milk


  • Mix dry ingredients, add wet ingredients and combine well.
  • Grease and flour a bundt pan.
  • Pour batter into the pan and bake for 40-45 minutes at 350.
  • Remove from the oven and poke holes into the cake using a bamboo skewer.
  • While the cake cools, mix the vanilla pudding and milk.
  • Immediately pour the pudding over the cake before it has a chance to set.
  • Allow for the pudding to be absorbed into the cake {about 20 minutes} before turning over to remove it from the bundt pan.
  • Drizzle with icing sugar and caramel sauce before serving.
