This crockpot tuscan soup recipe is a family favorite. It's so full of rich, delicious flavours that you won't believe it's low carb!

Ingredients

  • 1 pound ground mild Italian sausage, cooked & drained
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 6 cups chicken broth
  • 1 1/2 cup spinach, chopped
  • 3/4 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese, for serving

Instructions

    1. Add first six ingredients to the crockpot.

    2. Cook on low for four to six hours.

    3. Half an hour before serving add spinach and cream.

    4. Top with Parmesan before serving.
