Ingredients

  • 2 oz Philadelphia cream cheese cubed
  • 2 cup mozzarella cheese shredded
  • 1 cup almond flour
  • 2 tsp baking powder
  • 2 eggs
  • 3/4 cup keto spinach dip prepared
  • 1/2 cup mozzarella cheese shredded

Instructions

  • 1. Combine the dry ingredients, almond flour and baking powder in a stand mixer with paddle attachment.
  • 2. Place cream cheese and mozzarella cheese into a microwave safe dish. Microwave on high in 30 second intervals, stirring between, until the cheese is completely melted. This usually takes about 2 minutes.

    3. Add the cheese mixture to the stand mixer and combine with the almond flour. Scrape down the sides and remove cheese from the paddle with a rubber spatula if necessary.
  • 4. Add the eggs and combine into a soft dough.
  • 5. Place the dough in the refrigerator to cool for 30 minutes.
  • Tip: Chilling the dough makes it easier to cut and work with.
  • 6. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • 7. Divide the dough into two and place a dough ball between two sheets of plastic wrap and use a rolling pin to flatten it into a rectangular shape about 1/4" thick. Repeat for the second dough ball.
  • 8. Spread spinach dip over one rectangle of dough.
  • 9. Top with mozzarella cheese.
  • 10. Layer the second rectangle of dough over the first.
  • 11. Use a pizza cutter to cut the dough into 1" x 4" strips on each side.
  • 12. Twist each strip of dough.
  • 13. Bake for 12-15 minutes until the tops of the breadsticks start to turn golden.
