Ingredients

  • 1 cup all purpose flour
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup butter softened
  • 1 teaspoon vanilla extract
  • 1 tsp baking soda
  • 1/2 teaspoon salt
  • 2 Tbsp Valentine sprinkles
  • 1 tub Duncan Hines white frosting
  • Red food coloring
  • 1/4 cup Valentine sprinkles
  • 1 Tbsp candy hearts

Instructions

  • 1. Preheat the oven to 350 degrees f.
  • 2. Lightly grease a mini muffin tin (24 count). Line a baking sheet with parchment paper.
  • 3. In a large bowl or stand mixer, combine dry ingredients. Add butter, egg and vanilla and mix until a soft dough forms. Add Valentines sprinkles.
  • 4. Roll the dough into walnut sized dough balls.
  • 5. Place one dough ball into each greased muffin cup. Spread the dough up the sides of the tin to form a cup shape.
  • Tip: I use the round end of a cocktail muddler to create the dough cups. You could also use a spoon or the bottom of a small shot glass.
  • 6. Bake until cookies are lightly brown around the edges, 10-12 minutes.
  • 7. Remove the tray from the oven and while still hot, use the end of the muddler to press down the middle of the cookie cups. Let cool.
  • 8. Remove the cookie cups from the muffin tin and pace them on the prepared cookie sheet or a wire rack.
  • 9. In a medium bowl combine the frosting and a few drops of red food coloring. Mix until a medium pink color is achieved.
  • 10. Spoon the frosting into a piping bag. Tip: a freezer bag can also be used.
  • 11. Cut the tip from the bag and pipe the frosting into the cups.
  • 12. Top with Valentine sprinkles and red candy hearts.
