Preheat the oven to 350 degrees f. Line a cookie sheet with parchment paper.
Cream together butter and sugar in a medium bowl on low speed.
Add egg and vanilla, mix well.
Add flour and baking soda, combine until a soft dough forms.
Fold in chocolate chips or mini eggs.
Drop 8 to 10 large scoops of dough onto a parchment paper lined baking sheet.
Bake at 350 for 12 minutes or until the edges start to brown.
Divide the frosting into four small bowls.
Add red, green, blue and yellow food coloring to each bowl, mix until blended.
Scoop frosting into a piping bag with 1A tip and cover each cookie with the frosting.
Roughly chop up the mini eggs.
Top the cookies with mini egg pieces.
