Ingredients

  • 1 cup flour
  • ½ tsp baking soda
  • cup butter
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ cup chocolate chips or mini eggs
  • 1 cup vanilla frosting
  • Food coloring
  • ½ cup mini eggs

Instructions

  • Preheat the oven to 350 degrees f. Line a cookie sheet with parchment paper.
  • Cream together butter and sugar in a medium bowl on low speed.
  • Add egg and vanilla, mix well.
  • Add flour and baking soda, combine until a soft dough forms.
  • Fold in chocolate chips or mini eggs.
  • Drop 8 to 10 large scoops of dough onto a parchment paper lined baking sheet.
  • Bake at 350 for 12 minutes or until the edges start to brown.
  • Divide the frosting into four small bowls.  
  • Add red, green, blue and yellow food coloring to each bowl, mix until blended.
  • Scoop frosting into a piping bag with 1A tip and cover each cookie with the frosting.
  • Roughly chop up the mini eggs.
  • Top the cookies with mini egg pieces.
