Keto Churro Waffles

Ingredients

  • 1 cup mozzarella cheese shredded
  • 2 large eggs
  • 1/4 tsp baking powder
  • 2 Tbsp Swerve confectioners sweetener
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 Tbsp Swerve granulated sweetener
  • 2 Tbsp melted butter

Instructions

  • 1. Preheat the mini waffle maker.
  • 2. In a medium bowl, whisk together cheese, eggs, baking powder, confectioners sweetener, vanilla and half of the cinnamon until well combined.
  • 3. Add 1/4 of the waffle batter to the waffle iron and cook waffles for 3-5 minutes until done to your liking.
  • 4. Repeat until you have made four chaffles.
  • 5. Slice the chaffles into sticks.
  • 6. Drizzle with melted butter and sprinkle with remaining granulated sweetener and cinnamon.
  • 7. Serve immediately.
