Ingredients

  • 170 g 4 cups cooked elbow macaroni pasta, cooked according to package directions
  • 1 cup cheddar cheese cubed
  • 1 1/2 cups cooked ham cubed
  • 2 dill pickles diced
  • 2 green onion stalks diced
  • 1 cup mayonnaise
  • 2 Tbsp dill pickle juice
  • 1/2 tsp salt and pepper

Instructions

  • 1. In a large pot bring 6 cups of water to a boil. Add elbow pasta and cook for 10 minutes or until pasta is cooked al dente. Drain the pasta, rinse with cold water and allow to cool completely.
  • 2. Dice the pickles, cheese, ham and green onion.
  • 3. In a large mixing bowl combine cold pasta, pickle, ham and cheese.
    4. In a small bowl combine mayonnaise, pickle juice, salt and pepper.
  • 5. Add the dressing to the large bowl of pasta and mix well.
  • 6. Top with green onion and serve.
