Ingredients

  • 6 slices of bacon cooked
  • 8 large eggs
  • 1/2 cup milk
  • 2 cups frozen tater tots
  • 1 cup Tex Mex cheese shredded
  • 1/2 tsp salt and black pepper
  • 1 green onion stalk diced

Instructions

  • 1. Cook the bacon in a large skillet on medium heat until crispy. Set aside.
  • 2. Preheat the oven to 350 degrees f.
  • 3. In a large bowl, combine egg, milk and shredded cheese. Add seasoning of choice.
  • 4. Spray a large casserole dish with nonstick cooking spray. Place the tater tots on the bottom of the dish in an even layer.
  • 5. Layer the cooked bacon over the potatoes.
  • 6. Pour egg mixture over the ingredients in the casserole dish.
  • 7. Bake for 40 minutes or until the center is firm and cooked through.
  • 8. Top with diced green onions and serve warm.
