Thanksgiving Hand Pies

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 Tbsp sugar
  • 1 cup cold salted butter cut into cubes
  • 5-6 Tbsp cold water
  • 1/2 cup apple pie filling minced
  • 1 egg whisked

Instructions

  • In a medium mixing bowl combine flour and sugar.
  • Mix in butter with a whisk or fork, it will look crumbly.
  • Add water one tablespoon at a time and mix until the dough comes together.
  • Cover with plastic wrap and refrigerate for at least 30 minutes.
  • Cut the apples in the pie filling into small cubes.
  • Place the pie dough on a lightly floured surface and use a rolling pin to flatten to an 1/8” thick.
  • Cut out shapes with a cookie cutter.
  • Cut hearts into the center of half of the leaves & acorns.
  • Drop a tablespoon of filling into the center of each full cut out leaving the edges clean.
  • Place a cut out shape overtop and press the edges together with your fingers.
  • Crimp edges with a fork.
  • In a small bowl, whisk egg.
  • Brush the tops of each hand pie with egg wash using a pasty brush.
  • Place on a parchment paper lined baking sheet.
  • Bake at 375 for 8-10 minutes until the crust is golden brown.
