Separate the Oreo thins and gently scrape off the Oreo cream, i used a butter knife to scrape.
Prepare a baking sheet or large tray with parchment paper and set aside.
Place the white chocolate in a microwave safe bowl, microwave until melted, stirring every 15 seconds.
When the chocolate coating is completely melted add in the peppermint extract and stir.
Dip the cookies one at a time into the melted chocolate, using a fork gently flip over and scoop the chocolate on top of the cookie to give it a solid covering.
Allow the excess chocolate to drip from the cookie before placing it on the parchment-lined baking sheet.
Sprinkle with the crushed peppermint candies, work quickly as the chocolate will harden as it dries.
Let the chocolate set by leaving them out at room temperature for about 30 minutes
