Holiday Thin Mint Cookies

Ingredients

  • 10 oz bag of oreo thins or any other thin chocolate cookie
  • 8 oz white chocolate melting wafers or white chocolate bark
  • 1/4 tsp peppermint extract
  • 10 peppermint candies or candy canes crushed into small pieces

Instructions

  • Separate the Oreo thins and gently scrape off the Oreo cream, i used a butter knife to scrape. 
  • Prepare a baking sheet or large tray with parchment paper and set aside.
  • Place the white chocolate in a microwave safe bowl, microwave until melted, stirring every 15 seconds. 
  • When the chocolate coating is completely melted add in the peppermint extract and stir. 
  • Dip the cookies one at a time into the melted chocolate, using a fork gently flip over and scoop the chocolate on top of the cookie to give it a solid covering. 
  • Allow the excess chocolate to drip from the cookie before placing it on the parchment-lined baking sheet.
  • Sprinkle with the crushed peppermint candies, work quickly as the chocolate will harden as it dries.
  • Let the chocolate set by leaving them out at room temperature for about 30 minutes
